Heatlhy Snacking for a Recessionista

Tortilla Pizza


1 medium tortilla, 100-150 calories (Spelt or whole wheat works best. Don't use low-carb because they won't crisp well)
1/4 cup tomato sauce
1/3 cup shredded mozzarella*
1-2 frozen vegetarian meatballs

Optional: Veggies such as peppers and onions. Keep in mind the tortilla is thin so you don't want to top it with anything too heavy.

Preheat oven to 375

Lightly spray a cookie sheet with cooking spray. Then place tortilla on the sheet and lightly spray top of the tortilla.

Baked tortilla for about 5min until lightly crisp. Be careful not to burn it.

Meanwhile, microwave meatballs to defrost. Then crumble into pieces and set aside.

Remove tortilla from oven and cover with sauce, then "meat", then cheese.

Place the pizza in the oven and bake until cheese melts (5-10min)
* I try to keep the cheese under 150 calories. If I don't have shredded cheese I will use 2 string cheeses or Laughing Cow Mini Babybel light cheeses.
